This white sparkling wine from the hills of Monte Calvarina, on the east side of Soave, is perfect as an aperitif. Ideal with dishes of raw and shellfish, it is also great with Verona’s traditional dishes like Sopressa, cheese and the typical stockfish recipes of Baccalà alla Vicentina.

a distinct flavour. There is a long final return on notes 
of citrus.

What does pas dosè mean?

Pas-dosé sparkling wines are coveted by enthusiasts, as the Zero Dosage represents the purest essence of bubbles and the most authentic expression of the territory from which they come. Starkly different to a Brut sparkling wine, Pas Dosé, Dosage Zero or Nature wines receive their designation during the vinification of
Classic Method/Champenoise sparkling wines. After disgorgement, these wines are dosaged with a mixture called the liqueur d'expédition, and each producer has its own signature blend. When filled with only sparkling wine belonging to the same cuvée, a product called Pas Dosé (or Dosing Zero or Brut Nature) is obtained. Classic Method or Chapmenoise sparkling wines also receive this designation when the final sugar residue of the wine is less than 3g/l.
